Syd's Salmon Cakes

It's Syd's turn to take on Sunday Series! Even though I'm not as into football Sundays as Katie is, my boyfriend totally is and we often spend our Sunday's doing the same thing - cooking, relaxing, and watching football. One of our favourite things to indulge in on football Sunday are these deliciously satisfying salmon cakes. They're a creative take on just a regular salmon dinner that goes perfect with some potato wedges for a nice Sunday night in. 

INGREDIENTS:

  • 1 salmon fillet (diced)
  • ½ of each a red, yellow, green sweet peppers (diced)
  • ¼  yellow onion (diced)
  • 3 cloves of garlic (diced)
  • Dash of salt
  • Dash of pepper
  • Dash of garlic powder
  • ½ teaspoon of dried thyme OR rosemary
  • 1 teaspoon of mustard
  • ½ cup of panko (or breadcrumbs if you don’t have panko)

OPTIONAL:

  • 2 green chilli peppers (diced)

STEPS

  1. Sautee peppers, onions, garlic in olive oil until onions are clear then remove and cool in fridge for 15-20 minutes

  2. Mix together the salmon, herbs & spices, mustard, and chilled sauteed vegetables thoroughly

  3. Once mixture is thoroughly mixed then add panko or breadcrumbs

  4. Form small 2 x 1 inch pucks with mixture

  5. Lay out on a plate and chill for 15-20 minutes

  6. Heat frying pan on medium with olive oil

  7. Once pan is heated, reduce to medium-low and gently place pucks into the pan

  8. Cook each side until golden brown, about 2-5 minutes depending on your heat source

  9. Serve with desired sauce - we like using thai chili, tartar sauce, or spicy mayo
